Calamansi Muffin (Mommy Grace's version)

Happy independence day, Filipinos!

Today is family day and I'd like to make something 'special' for my family. Yesterday, I was able to get a recipe for calamansi cupcake so I decided I'll make my own version :)

Calamansi cupcakes are famous in Boracay.



Here's what you'll need :
Please take note that I don't have oven, I'll be using my microwave or you may steam your cakes



2 cups flour
1 cup sugar
2 tsp baking powder
A pinch of salt
1/2 cup powdered milk
2 eggs
1/4 cup calamansi extract
1/2 cup oil
Vanilla extract (optional)

First, combine the wet ingredients : eggs, calamansi extract, oil, vanilla extract. Mix well





Then the dry ingredients: flour, sugar, baking powder, milk powder.



Add the dry ingredients to your egg-calamansi mixture. Mix well until it looks like this:



Pour the batter to your molds. I don't have one, I just used paper cupcake molder.



Bake for 1 1/2 minutes (per batch, remember I am using microwave) on medium high.

It's delicious, my firstborn loved it!





I love how the sour-taste of calamansi and the sweetness blend perfectly. Yummy!
